
There are dinners you enjoy, and then there are dinners you experience.
Hidden behind an intimate counter, Bovino After Dark blurs the line between fine dining and an unforgettable night out. With a rotating menu featuring seasonal, local ingredients, the concept is simple: a multi-course tasting menu prepared just inches away from your seat, where every plate arrives with intention and every course tells its own story.


Before the tasting menu officially began, I started with both the baked and raw oysters. Fresh, briny, and the perfect way to ease into the evening, they set the tone for what was to come. I paired the entire meal with the Conde Valdemar Rioja Blanco from Spain, whose bright notes of green guava, lime zest, honeycomb, and a touch of salinity complemented each course beautifully.
The first course featured Szechuan pork with green beans and Sungold tomatoes. It was a strong introduction to the menu, balancing rich, savory flavors with the sweetness of peak-season tomatoes and the crisp bite of the green beans. It was familiar enough to feel comforting while still offering something unexpected.

Next came one of my favorite courses of the evening: Alabama crab served with a yellow corn tamale and tomatillo. The sweetness of the crab paired perfectly with the soft, delicate tamale, while the tomatillo added just enough brightness to bring everything together. It was light, vibrant, and beautifully balanced.
The third course shifted into something much richer with duck, kimchi bao, chanterelle gumbo, and okra. This was easily the boldest course of the night. Every component brought something different to the plate, creating layers of flavor that kept evolving with each bite. It was comforting, deeply savory, and one of those dishes you don’t rush through.


The final savory course featured hanger steak with red habanada peppers, chermoula, and potatoes. The steak was beautifully prepared, while the herbaceous chermoula added freshness that kept the dish from feeling too heavy. It was a satisfying finish before dessert without overpowering the rest of the menu.

Dessert was a nostalgic surprise. It was a play on cereal and milk that came together in a playful finale that somehow felt refined without losing its sense of fun. The sweetness of the mango, the citrusy aroma of the lime leaf, and the subtle hint of fennel created a dessert that was both familiar and completely unexpected.

What makes Bovino After Dark so memorable isn’t just the food, it’s the experience of watching every course come to life right in front of you. Sitting at the chef’s counter gives you a front-row seat to the precision, technique, and care that goes into every plate. There’s no separation between the kitchen and the dining room, making you feel like part of the evening rather than simply a guest.
Bovino After Dark isn’t about choosing from a menu or rushing through dinner. It’s about slowing down, trusting the chefs, and allowing each course to unfold at its own pace. Every dish felt intentional, every ingredient had a purpose, and every course built naturally into the next. It’s the kind of dining experience that reminds you food can be just as much about storytelling as it is about flavor.
